Every wine produced and bottled at The Hilmy Cellars label is made from scratch in our cellar. In addition to stainless steel tanks, we also utilize French and American oak barrels.
Every bin, vat, tank, or barrel is made to the highest standards. In every container, we strive to deliver high-quality wines. Texas High Plains grapes account for over 85% of our output. We think that Texas wine has a distinctive and eloquent flavor profile. Our objective is to maintain quality in production while also capturing the essence.

Grape Creek Vineyards, as the name would suggest, focuses on making wines from grapes that are grown on the estate. This is in contrast to many wineries, which make wine from a variety of fruits and berries, or even just grapes that are sourced from other vineyards. The focus on estate-grown grapes gives Grape Creek Vineyards’ wines a sense of terroir that is unique among American wines. However, that’s not the only thing that sets them apart, as their entire winemaking process is unique.
Most prominent American wines are aged in new oak barrels which give them an intense amount of smokiness. Grape Creek Vineyards eschews this trend by aging their wines in used whiskey barrels instead. The result is a much smoother flavor profile that is more akin to wines from Europe.
Pedernales Cellars is named for the geography and history of its location. The “pedernales” means flint in Spanish. When an ancient flint Indian arrowhead was discovered in the vines, part of an Indian flint stone ax was dug up on the winery grounds.
We use good ground cover management and natural pest control methods in our vineyard, including the employment of local species (such as Purple Martins for insects). Winery compost is also reused in the vineyard.
The Spicewood Food Company’s oils are available for sampling in our tasting room. We strive to recycle the bulk of our tasting room cardboard waste. Our winery is also equipped with CFL and solar lighting rather than incandescent bulbs.
